Evan has an M.S. in Sustainability Studies from Lenoir-Rhyne University. His master’s thesis explored the intersections between veganism and sustainability. Evan is particularly knowledgeable about the environmental impacts of animal agriculture, and the environmental benefits associated with transitions to plant-based diets. As an environmental professional, Evan views veganism as both a necessary social justice philosophy and as a powerful strategy for sustainability. Overall, Evan is interested in cultivating a sustainable world in which all life has the ability to flourish.

Noel Thurner began consuming a vegetarian diet in 1973 for ethical reasons. As time marched on, she became more aware of both the health benefits and the environmental impacts of such a diet. In 2000 she began fermenting vegetables, and this has led her to the growing knowledge about the importance of the gut biome and intakes of whole grains and legumes, vegetables and fruits in supporting human health and wellness. So she realizes that a plant-based lifestyle supports not only the human body and its gut biome but also our Planet and its inhabitants

Back in 1990, Kathryn Parker was sailing with her husband on their 40′ sloop Nightrainbow, reading, “Diet for a New America” by John Robbins. Because she was so moved, she became a Vegan and raised her baby daughter a Vegan. She went back to meat eating several years later, but seven years ago, she was inspired to try Raw Veganism.

Kathryn’s focus with food has alays been on optimal health. She has been greatly guided by the Medical Medium lifestyle to heal chronic health issues, which brought her back to Veganism. This time, an ethical Vegan.

She is a fabulous, passionate cook, and an educator with experience guiding people to begin a healthy way of life, both physically and spititually. Kathryn likes to connect people through Vegan options. Her friends and her AirBnB guests benefit from her healthy cooking.
